Ingredients: 3 1/2 lb. ground lamb, trimmed, chopped 2 cups fresh baby spinach, cut into 1/4 inch pieces 2 tablespoons olive oil 1 large onion, finely chopped 1 garlic clove, minced 1 tablespoon fresh ginger, minced 2 tablespoons chopped fresh parsley 1 tablespoon freshly ground black pepper 1 tablespoon finely chopped fresh cilantro 1 teaspoon finely chopped dried basil Instructions: In a large pot, sauté the lamb for 5 minutes or until the skin is translucent.

Add the spinach and sautée for 2-3 minutes, until the spinach is wilted.

Add oil, onion and garlic and saute for another 2-4 minutes, stirring occasionally.

Add ginger and cook for a minute or two.

Add parsley and garlic.

Stir well and add the black pepper and ginger, and cook another minute.

Stir in the tomatoes, tomato sauce, basil, cilantro and fresh parsleys.

Stir again.
